Portabellas and Tomatoes on Angel Hair Pasta
-2 portabella mushrooms, cut into bite size chunks
-1 large can diced tomatoes, drained (or, probably 3 or 4 large fresh tomatoes, chopped)
-cooked angel hair pasta
-olive oil
-balsamic vinegar
-garlic, chopped into tiny pieces (I usually use 4 or 5 cloves)
-about 1/2 onion, chopped
-basil (ripped up fresh, or, you can use dried)

Directions:
Saute mushrooms, onions, and garlic in olive oil on medium heat until the mushrooms are soft (this only takes a few minutes). Add tomatoes, and about 3 big splashes of balsamic vinegar, and saute for about 5 minutes. Add fresh basil and saute again for 5 to 10 minutes. Serve over angel hair pasta. Serves 2.
